As a "baking enthusiast" (or, I should say, "once a
baking enthusiast"… before the kids came along!), I found this article
quite interesting, especially the TED talk on cookie science. Tempted to
try it out next time I find a moment to bake - my favorite type of
chocolate chip cookie is probably a chewy, tanned version, paired with a
